I am not a chef, and definitely far from a food photographer, but here are some of my favorite easy meals to get me going! I have been starving during this pregnancy, but these recipes keep me full and satisfied. I will also mention, I have type 1 diabetes, so I have to eat a very specific way during pregnancy so I (and baby!) stay in tip-top health!

GRANOLA

prenatal granola breakfast

Ingredients:

6 C old fashioned oats

2-3 C unsweetened coconut chips

3-4 C nuts

2 t kosher salt

1 C maple syrup

2/3 C olive oil

Cooking Instructions:

Preheat oven to 300 degrees and place parchment paper on two baking sheets. Mix all ingredients together, spread onto parchment lined baking sheet in one even layer. Cook for 40 minutes, flipping once halfway through.

*add over chia pudding, greek yogurt, or milk!

LOADED OATMEAL

prenatal/postnatal loaded oatmeal

Loaded oatmeal is such a great breakfast, prenatal or postnatal, and as the temperature starts dropping in NYC, I find myself craving this hearty dish. I like to super load it, with all kinds of goodies, to make it last.

Favorite Toppings:

  • banana

  • peanut butter

  • berries

  • hemp hearts

  • chopped nuts

  • drizzle of maple syrup

CHIA PUDDING

I always keep single portion jars of chia pudding in my refrigerator. When I want one, I just throw it into the bowl and add whatever fruit/toppings I have on hand. It’s a refreshing light breakfast or snack that keeps me full!

Ingredients

  • 2 T chia seeds

  • 1/2 cup milk (any kind)

Cooking Instructions:

Mix the chia seeds and milk together well, and let set in the refrigerator for a minimum of 2 hours. Add whatever toppings you like! I usually enjoy berries, hemp hearts, sliced almonds, and a drizzle of maple syrup!

LOADED EGG SANDWICH

I eat this EVERY morning and it gets me through preschool drop off/pick up, teaching at least one class, and at least 6 subway rides.

Ingredients:

  • Multigrain English Muffin

  • Avocado

  • Hemp Hearts

  • Fried Eggs (well done)

  • Salt + Pepper

TOMATO TOAST

This is my new favorite lunch. I’m having far more vegetarian tendencies this pregnancy and this is so refreshing + filling.

Ingredients:

  • Sprouted Bread

  • Butter

  • Avocado

  • Hemp Hearts

  • Sliced Heirloom Tomato

  • Crumbled Feta

  • Salt + Pepper
